"Supermodel" Monday

Each Monday I will be featuring a "Supermodel" that I admire - and I don't mean the 5'10"thin-as-a-stick kind of supermodel.  I mean a literal model for super healthy living.  This person inspires people to live balanced, healthy lives.

Today I am featuring one "supermodel" that is truly super!  It's even in the title of her popular blog, Super Healthy Kids.

 The Basics
 I have a passion for healthy family living. I have
three kids who have become adventurous eaters in the past 5 years.  One of the things I love to do is  write recipes, meal plans, and exercise ideas for families to eat better and live healthier lives.

With the new dietary guidelines for 2010, the USDA introduced Choose MyPlate to help families understand what balanced eating should include.  Some of these guidelines include:
  • Make half your meal fruits and vegetables.
  •  Eat less
  •  avoid oversized portions
To help kids learn these dietary guidelines, I’ve created the Healthy Kids Plate!
The Healthy Kids Plates
   

This plate makes it easy to visualize exactly what kids should be eating at each meal.  It not only teaches the kids, but also mom and dad can remember that fruits and vegetables should be the biggest part of the meal!
 
Favorite Recipe 
One of our favorite recipes that help us to eat more fruits and vegetables is one we call “Peters Pile Of Peppers!”

We use:
  • 1 Zucchini, chopped
  • 1/4 red onion, chopped
  • 1 tomato, chopped
  • 1 orange bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • Italian Dressing
  •  Feta cheese
This salad is super delicious and looks scrumptious on a dinner plate with some BBQ chicken and some rice!

 Supermodel Secret ;)
Our best healthy eating secret is to stop grazing all day.  Both my kids and I are much better eaters when we are hungry!  A pile of peppers tastes a million times better on an empty stomach, than after a day of snacking on junk food!
