Ok, I am going to be honest here. Some of the ingredients are not my usual staples, BUT for some people, they might be the usual suspects ;)
Key Players
- Chicken
- Red Bell Pepper
- onion
- 1 cup snow peas
- Jalapeno (optional)
- Cooked Quinoa
- Broccoli & Carrot Slaw
- Garlic
- Ginger
- Soy sauce (low sodium)
- Chili garlic sauce
- 1 egg
Chop all the veggies, garlic and chicken. Take of the "rib" (inside) of jalapeno and mince (finely chop) the jalapeno
Dump all of the veggies, including snow peas, in a hot skillet with a tbs of olive oil. Wait to add chicken.
Add in as much ginger as you like! I added 2 tsp.
A couple minutes later, add in 1 1/2 tsp chili garlic sauce - careful, it's hot!
Add in chicken and 2 tbs of soy sauce (1 if it is kid-friendly)
Move everything to one side of the pan and add in cooked quinoa and 1 egg. Mix the egg in well and stir it all together.
Make it pretty and beware: It's REALLY good. Hard to only have 1 serving.
